Under the direction of the General Manager, the Executive Chef will ensure the provision of attractive, well-presented meals that meet the standards, criteria, and philosophy of Regency Retirement Resort. The Executive Chef will ensure that the Food Services Department operates in an effective, efficient, and safe manner at all times.

Duties and Responsibilities

- Set and maintain a high standard of conduct, personal grooming, and appearance for all staff to emulate.

- Produce and present meals that meet the quality levels consistent with the lifestyle promoted at the Resort.

- Develop unique seasonal menu rotations that consider the social, ethnic, and cultural backgrounds of residents, adhering to budgetary guidelines.

- Assist the General Manager in staffing the Food Service Department with appropriately placed personnel, participating in the selection, appraisal, coaching, and discipline of employees.

- Participate in Management Team meetings as required. Provide food services for special events and cater to external groups, showcasing the service level expected by residents.

- Supervise staff in all aspects of food preparation, meal service, presentation, procurement, storage, and clean-up by coordinating work assignments, scheduling, evaluating performance, and determining training and orientation requirements.

- Develop, update, and follow menus, special diets, and recipes that reflect local tastes and cultural variations, ensuring staff adherence.

- Purchase food, dietary supplies, dishes, cutlery, and small wares in accordance with budget and purchasing guidelines to control costs and maintain quality.

- Ensure proper storage procedures and adherence to prescribed sanitation, infection control, and food safety protocols, meeting WCB standards.

- Develop, implement, control, and evaluate departmental goals, objectives, policies, and procedures, maintaining required standards.

- Develop the departmental budget in conjunction with the General Manager and maintain monthly and yearly budget controls.

- Develop, implement, and evaluate documentation and reporting systems to maintain records and communication for the department.

- Foster a team environment within the facility through positive interactions with other departments and coaching of Food Service staff.

- Maintain confidentiality of all resident and organizational information, respecting the spirit, dignity, and individuality of residents.

- Communicate any relevant information to the General Manager or - Administrative Assistant to ensure residents' health, safety, and happiness.

- Familiarize with and adhere to all organizational policies and procedures. - Assist in the orientation of new employees.

- Perform other related duties and multitasking functions as assigned.

Qualifications

Education and Experience

Must have a minimum of 3-5 years of experience as a chef in the hospitality industry.

Graduate from a recognized cooks training program, completed an apprenticeship program

Received a Red Seal or certificate from a recognized training program is an asset.

Food Safe Level II, renewable every four years

Serving it Right certification.

WHMIS certification

Effective verbal and written communication skills

Ability to be tactful, friendly, and extremely patient with residents, and courteous and cooperative with visitors and fellow workers

Strong planning, organizational, and leadership skills

Mental and physical ability to perform the duties and responsibilities of the position
